100 grams de sucre

- 4.egg yolks
- 250 ml de llet

- 250 ml de nata de montar
- 250 ml double cream
- 1 cullareta de safrà (ben plena)

1. Batre les yellmes d'ou amb el sucre fins a que estiga sua i cremòs
- Beat the egg yolks and sugar together until smooth and creamy.
- Amb un morter xapica el safrà, posa la mitad del polvo en la llet i calenta fins a punt de bollir
- Grind most of the saffron in a mortar and pestle, and put half of the powder into the milk, and heat until boiling point.
- Batre la llet amb l'ou i sucre i torna a possar a foc lleuger fins que espese, ves menejant per a que no se pegue. Saca del foc i mescla amb la nata. Afegeix la resta del safrà. Deixa que es gele.
- Pour the boiling milk into the beaten yolk/sugar mixture while continuously beating, and then return to the pan. Continue to warm on low heat until thickened, carefully stirring all the while .Pour the mixture into jug of cream, mix it briefly. Add the rest of the saffron powder. Just let it sit until it's cool.
- Posa la mescla en el congelador en un conteneor sense tapa , meneja cada mig hora
- Leave in the freezer in an uncovered pot and stir every 30 minutes
